Heat the oven for these sea­sonal fruit desserts to warm up on cool nights.

WIN­TER BAKED FRUIT

SERVES 6 PREP 15 MINS COOK 35 MINS

3 small red-skinned ap­ples, un­peeled, cored, halved (leave stems in­tact)

3 small pears, un­peeled, cored, halved (leave stems in­tact)

1⁄3 cup golden syrup

100g but­ter, chopped 2 cin­na­mon sticks

½ tsp ground nut­meg 2 or­anges, peeled, thickly sliced

250g straw­ber­ries, halved

1⁄3 cup flaked al­monds cook­ing oil spray 2 cups bought vanilla cus­tard ONE Pre­heat oven to 180°C/160°C fan. Grease a 2.5-litre (10-cup) rec­tan­gu­lar oven­proof dish. Place ap­ple and pear in pre­pared dish. Com­bine golden syrup, but­ter, cin­na­mon and nut­meg in a small saucepan. Cook and stir over low heat for 5 mins or un­til melted and com­bined. Pour over fruit in dish and turn to coat. Bake, turn­ing halfway through cook­ing, for 20 mins or un­til al­most ten­der.

TWO Add orange and straw­ber­ries to dish and turn to coat in but­ter mix­ture. Sprin­kle al­monds over. Spray al­monds with oil. Bake for a fur­ther 10 mins or un­til straw­ber­ries are just ten­der.

Stand for 5 mins. Serve the warm fruit with cus­tard.
