Ras el hanout is a Middle Eastern spice mix that is used in many Moroccan recipes. It can contain 20 or more different herbs and spices – the exact mixture depends upon the maker.
The blending of ras el hanout is considered an art and specific recipes are closely guarded from one spice shop to the next.
