PARMESAN PO­LENTA

2 cups salt-re­duced chicken stock

1 cup po­lenta (corn­meal)

1⁄2 cup freshly grated parmesan

Place stock in a medium saucepan over mod­er­ate heat. Bring to a sim­mer. Slowly whisk in po­lenta in a thin steady stream un­til com­bined. Whisk and cook for 5 mins or un­til po­lenta is thick. Add parmesan and stir to com­bine.

Easy sub­sti­tute Swap the wine for wa­ter to make a more eco­nom­i­cal fam­ily meal.
