Pop one or two of these easy and de­li­cious treats into the fam­ily’s packed lunches.

SEEDY FLAPJACKS MAKES 18 PREP 10 MINS COOK 40 MINS

✚ 4 cups rolled oats

✚ 1 cup soft brown sugar ✚ ¼ cup cur­rants

✚ ¼ cup black chia seeds ✚ ¼ cup flaxseeds ✚ ½ cup plain flour

✚ 250g but­ter, chopped ✚ ½ cup golden syrup ✚ 1 tsp finely grated le­mon zest

1 Pre­heat oven to 150°C/130°C fan. Grease an 18cm x 26cm slice pan. Line the base and two long sides with bak­ing pa­per, ex­tend­ing pa­per 5cm above the side of the pan.

2 Com­bine the oats, sugar, cur­rants, chia seeds, flaxseeds and flour in a large bowl.

3 Melt the but­ter and golden syrup in a saucepan over low heat.

Stir through the le­mon zest. Pour onto the dry in­gre­di­ents and mix un­til well com­bined.

4 Spoon the mix­ture into the pre­pared pan, press­ing down evenly to smooth the top. Bake on the lower shelf for about 40 mins or un­til browned and set. Re­move from the oven and cool com­pletely in pan be­fore cut­ting.

Note: Suit­able to freeze. Not suit­able to mi­crowave.
