SEEDY FLAPJACKS MAKES 18 PREP 10 MINS COOK 40 MINS
✚ 4 cups rolled oats
✚ 1 cup soft brown sugar ✚ ¼ cup currants
✚ ¼ cup black chia seeds ✚ ¼ cup flaxseeds ✚ ½ cup plain flour
✚ 250g butter, chopped ✚ ½ cup golden syrup ✚ 1 tsp finely grated lemon zest
1 Preheat oven to 150°C/130°C fan. Grease an 18cm x 26cm slice pan. Line the base and two long sides with baking paper, extending paper 5cm above the side of the pan.
2 Combine the oats, sugar, currants, chia seeds, flaxseeds and flour in a large bowl.
3 Melt the butter and golden syrup in a saucepan over low heat.
Stir through the lemon zest. Pour onto the dry ingredients and mix until well combined.
4 Spoon the mixture into the prepared pan, pressing down evenly to smooth the top. Bake on the lower shelf for about 40 mins or until browned and set. Remove from the oven and cool completely in pan before cutting.
Note: Suitable to freeze. Not suitable to microwave.
