BA­CON AND HERB CHICKEN PAT­TIES

MAKES 8 PREP 15 MINS (+ CHILL­ING) COOK 10 MINS

✚ 1 gar­lic clove, crushed ✚ 2 green onions, finely chopped

✚ 500g chicken mince

✚ 1 egg

✚ 3/4 cup stale whole­meal bread­crumbs ✚ 2 tbsp finely chopped fresh flat-leaf pars­ley ✚ 2 tbsp finely chopped fresh basil ✚ 1/3 cup tomato chut­ney ✚ 8 rind­less ba­con slices

1 Com­bine gar­lic, onion, mince, egg, bread­crumbs, herbs and chut­ney in a large bowl. Sea­son well. Shape mix­ture into 8 pat­ties. 2 Wrap pat­ties with ba­con. Place on a tray. Chill for 30 mins.

3 Cook over medium heat in an oiled fry­ing pan un­til browned on all sides and cooked through.
