What you’ll need…

For the honey syrup:

½ cup honey

½ cup wa­ter

For the cock­tail:

Grape­fruit wedges

Salt for rim

Hand­ful of ice

60ml fresh grape­fruit juice

1 tbsp fresh lime juice

2 tbsp fresh honey syrup

60ml soda wa­ter

60ml te­quila

What to do… To make the honey syrup, com­bine honey and wa­ter in a small saucepan. Place over medium heat, stir­ring of­ten un­til the mix­ture is smooth. Re­move from heat and al­low to cool to room tem­per­a­ture. Next, re­move ice and moisten the rim of the serv­ing glass with a grape­fruit wedge. Pour salt into a small dish. Turn the glass up­side down and twist rim gen­tly in the salt.

Fill the glass with ice to chill. Pour re­main­ing in­gre­di­ents (in­clud­ing honey syrup) into a cock­tail shaker and mix to com­bine.

Pour mix­ture into the chilled glass.

Gar­nish with grape­fruit wedges.
