200g un­salted but­ter, soft­ened

200g caster sugar

1 egg, lightly beaten

400g plain flour, plus ex­tra for dust­ing

2 tsp car­damom

1 tsp cin­na­mon

Jam of your choice Beat in egg un­til well-com­bined, then add flour and spices and mix un­til dough forms. Gather into a ball, wrap in glad wrap and chill for at least 1 hour. Re­move from oven and gen­tly cut a small hole in the cen­tre of half of the cook­ies. When cold, place a tea­spoon of jam in the cen­tre of full cook­ies and place the other cook­ies on top.
