VANILLA CUS­TARD BA­NANA CREPES

Serves: 6 Time to make: 15mins Cost per serve: $1.35 Low kJ Low sodium High pro­tein 4 small medium-firm ba­nanas 2 ta­ble­spoons soft brown sugar 1 tea­spoon ground cin­na­mon 6 ready-made crepes 1 quan­tity vanilla cus­tard, heated 1 Pre­heat oven to 180C. Peel ba­nanas, halve length­ways and cut into chunks. Place into an oven­proof dish. Sprin­kle with sugar and cin­na­mon. 2 Bake ba­nanas for ten min­utes. 3 Warm crepes in mi­crowave for about 45 sec­onds. 4 Place ba­nana slices onto one side of each crepe and spoon over some cus­tard. Fold over. Driz­zle with a lit­tle more cus­tard. Serve im­me­di­ately.
