Serves: 4 Time to make: 15 mins Cost per serve: $2 1 small ripe av­o­cado, peeled, stoned 1 ta­ble­spoon chopped chives 1 tea­spoon lemon juice Tabasco sauce, to sea­son olive oil spray 4 eggs 4 multi­grain English muffins, split in half 75g shaved ham 1 Place av­o­cado in a small bowl; mash roughly. Stir in chives and lemon juice. Sea­son mix­ture with Tabasco sauce and cracked black pep­per; set aside. 2 Spray a large non-stick fry­ing pan with olive oil and set over medium-high heat. Break eggs into pan; pan­fry for two to three min­utes, or un­til cooked to your lik­ing. 3 Toast muffins un­til golden. Spread av­o­cado mix­ture onto four muf­fin halves. Top each with shaved ham and one fried egg, then top with re­main­ing muf­fin halves. Serve im­me­di­ately.
