For some, it might seem like a big jump for ac­claimed Viet­namese chef Luke Nguyen (left) to try his hand at French cui­sine. But any­one has lived in or been to Viet­nam knows the con­nec­tion be­tween the two coun­tries is great. France ruled Viet­nam as a colony for more than 50 years un­til 1954, hav­ing a huge in­flu­ence on its ar­chi­tec­ture – and its food. We can thank the de­li­cious bánh mì pork roll for this mar­riage of culi­nary cul­tures. Luke be­gins in beau­ti­ful Paris, ex­plor­ing the cap­i­tal’s old­est mar­ket, cook­ing with his Viet­namese-French cousin Lau­rent and dish­ing up a fu­sion steak tartare dish with a tra­di­tional Parisian butcher.
