Luke Nguyen’s France

For some, it might seem like a big jump for acclaimed Vietnamese chef Luke Nguyen (left) to try his hand at French cuisine. But anyone has lived in or been to Vietnam knows the connection between the two countries is great. France ruled Vietnam as a colony for more than 50 years until 1954, having a huge influence on its architecture – and its food. We can thank the delicious bánh mì pork roll for this marriage of culinary cultures. Luke begins in beautiful Paris, exploring the capital’s oldest market, cooking with his Vietnamese-French cousin Laurent and dishing up a fusion steak tartare dish with a traditional Parisian butcher.
