Prawn laksa

Serves 4


200g dried rice noo­dles 1 tbs oil 400g raw, peeled prawns 250g tofu, cubed 1 packet Con­ti­nen­tal Chicken Mild Green Curry Recipe Base 1 x 400ml can light co­conut milk ½ cup wa­ter 2 tsp fish sauce 2 cups bean sprouts 1 bunch co­rian­der Fresh lime juice


Pre­pare noo­dles ac­cord­ing to pack di­rec­tions. Heat oil in a wok or fry­ing pan and stir fry prawns for 1 minute. Add tofu, recipe base, co­conut milk, wa­ter and fish sauce and bring to the boil. Di­vide noo­dles be­tween 4 bowls and pour over laksa. Top with bean sprouts, co­rian­der and a squeeze of lime.
