200g dried rice noodles 1 tbs oil 400g raw, peeled prawns 250g tofu, cubed 1 packet Continental Chicken Mild Green Curry Recipe Base 1 x 400ml can light coconut milk ½ cup water 2 tsp fish sauce 2 cups bean sprouts 1 bunch coriander Fresh lime juice
Prepare noodles according to pack directions. Heat oil in a wok or frying pan and stir fry prawns for 1 minute. Add tofu, recipe base, coconut milk, water and fish sauce and bring to the boil. Divide noodles between 4 bowls and pour over laksa. Top with bean sprouts, coriander and a squeeze of lime.
