When I’m in Hol­land I eat the pan­nenkoeken.’ I’ve of­ten found it wise to fol­low the ad­vice of the Beastie Boys to the let­ter, so I knew ex­actly what would be on my plate in Am­s­ter­dam. Leg­end has it that Mike D, MCA and Ad-Rock came up with the line af­ter visit­ing the Up­stairs Pan­nenkoe ken­huis, a tiny res­tau­rant with only four ta­bles at the top of a steep stair­case in a tra­di­tional Dutch house that dates back to 1539. Squeezed into a corner ta­ble, I or­dered the ap­ple, ba­con and cheese pan­nenkoeken (pan­cake). It was ex­quis­ite. Sorry, some­times I like to brag.
