YOU could be for­given for think­ing that Maggie Beer has not much in com­mon with Ja­panese cui­sine.

The Ja­panese are known for their artis­tic dish pre­sen­ta­tion and re­strained, pe­tite serv­ings – some­thing Maggie claims is not her forte.

But on this jour­ney from Tokyo to Osaka and the quiet coun­try­side of Noto, she learns there is a syn­ergy be­tween her Mediter­ranean style of cook­ing and the Ja­panese ways.

Above all, they are both in the pur­suit of flavour.

Both are driven by us­ing the high­est qual­ity, fresh and sea­sonal in­gre­di­ents.

She takes her notes home to the Barossa to show her friends some new recipes that are a unique fu­sion of Mediter­ranean and Ja­panese cui­sine, us­ing her Aus­tralian re­gional in­gre­di­ents.
