Whoopie Pies

In­gre­di­ents: 2 cups plain flour 1/3 cup co­coa 1 cup brown sugar, firmly packed 1 tea­spoon bi­car­bon­ate of soda 100g but­ter, melted 1 tea­spoon vanilla ex­tract 3/4 cup but­ter­milk 1 egg Fill­ing: 100g mar­garine or soft­ened but­ter 100g pure ic­ing sugar, sifted 1 tea­spoon vanilla ex­tract Method: 1. Pre­heat oven to 170 de­grees Cel­sius. Line 2 oven trays with bak­ing pa­per.

2. Place all in­gre­di­ents in a bowl and beat with an elec­tric mixer un­til just com­bined. Drop ta­ble­spoon­fuls of mix­ture onto pre­pared trays, leav­ing a 4cm gap be­tween each. Try to keep the dropped mix­ture as round as pos­si­ble. Bake 8 min­utes or un­til firm. Cool on trays for 10 min­utes, then trans­fer to a wire rack to cool com­pletely. Re­peat with re­main­ing mix­ture.

3. Make fill­ing. Place all fill­ing in­gre­di­ents in a small bowl and beat with an elec­tric mixer for 2 min­utes or un­til light and fluffy. Sand­wich cakes to­gether with fill­ing.
