NANA’S BAKING SKILLS INSPIRE COOK
MOMENTS spent baking with her beloved Nana, Lily, are some of the sweetest memories Kelly Williamson has.
The charismatic cook has been stirring – and savouring – treats since she could stand on a stool at Lily’s kitchen bench and mix the cakes for Sunday afternoon tea.
With precious recollections in mind and her Nana’s cherished baking spoon in hand, she opened Lily and the Angel in Alfred Cove a year ago.
“I loved my Nana’s method of baking, nothing was weighed or measured, she just instinctively knew,” Kelly shared.
“She had her baking spoon and that was her measuring system – I’m slightly more technical now than she was, but I still make some of her recipes that way.”
Kelly’s cake-making finesse rose to new heights when she went back to uni more than a decade ago.
“Baking was a great way of taking time out from my fulltime interior design degree,” the mum and café-owner explained.
“It was such an intense course that even when I was supposed to take breaks from study I just couldn’t stop my brain from wandering back to the projects I was working on.”
Oozing warmth and vintage charm, the cake and coffee bar is styled on Lily’s home.
“I wanted to create a place where you allowed yourself time,” Kelly said.
“When spending hours at my Nana’s, I was never in any rush to leave. I loved chatting with her over a cuppa, putting the world to rights or just having a good-old gossip.
“Of course there was always something delicious wafting in from her kitchen and heaven forbid if you tried to leave without being fed!”
Kelly’s signature dessert is the striking Persian love cake.
“My mum was a chef in the UK so I learned the more detailed ins-and-outs of baking from her,” she said.
“She’s also celiac so my Persian love cake evolved from experimenting with gluten-free and flourless cakes and also my love of anything Middle Eastern. It’s just so beautiful, fragrant and vibrant – what’s not to love?”
The Persian love cake is the café’s most requested custommade dessert, especially in fig season.
