MO­MENTS spent bak­ing with her beloved Nana, Lily, are some of the sweet­est mem­o­ries Kelly Wil­liamson has.

The charis­matic cook has been stir­ring – and savour­ing – treats since she could stand on a stool at Lily’s kitchen bench and mix the cakes for Sun­day af­ter­noon tea.

With pre­cious rec­ol­lec­tions in mind and her Nana’s cher­ished bak­ing spoon in hand, she opened Lily and the An­gel in Al­fred Cove a year ago.

“I loved my Nana’s method of bak­ing, noth­ing was weighed or mea­sured, she just in­stinc­tively knew,” Kelly shared.

“She had her bak­ing spoon and that was her mea­sur­ing sys­tem – I’m slightly more tech­ni­cal now than she was, but I still make some of her recipes that way.”

Kelly’s cake-mak­ing fi­nesse rose to new heights when she went back to uni more than a decade ago.

“Bak­ing was a great way of tak­ing time out from my full­time in­te­rior de­sign de­gree,” the mum and café-owner ex­plained.

“It was such an in­tense course that even when I was sup­posed to take breaks from study I just couldn’t stop my brain from wan­der­ing back to the projects I was work­ing on.”

Ooz­ing warmth and vin­tage charm, the cake and cof­fee bar is styled on Lily’s home.

“I wanted to cre­ate a place where you al­lowed your­self time,” Kelly said.

“When spend­ing hours at my Nana’s, I was never in any rush to leave. I loved chat­ting with her over a cuppa, putting the world to rights or just hav­ing a good-old gos­sip.

“Of course there was al­ways some­thing de­li­cious waft­ing in from her kitchen and heaven for­bid if you tried to leave without be­ing fed!”

Kelly’s sig­na­ture dessert is the strik­ing Per­sian love cake.

“My mum was a chef in the UK so I learned the more de­tailed ins-and-outs of bak­ing from her,” she said.

“She’s also celiac so my Per­sian love cake evolved from ex­per­i­ment­ing with gluten-free and flour­less cakes and also my love of any­thing Mid­dle East­ern. It’s just so beau­ti­ful, fra­grant and vi­brant – what’s not to love?”

The Per­sian love cake is the café’s most re­quested cus­tom­made dessert, es­pe­cially in fig sea­son.
