Fiery Salmon and Chive Fishcakes
• Sweet potato, 150g, peeled and cubed • Salmon fillets, 2 • Red onion, ½, finely chopped
• A red chilli, finely chopped
• Ground walnuts, 40g • Chives, handful, finely chopped • Olive oil, 1tbsp • Kale, 200g • Broccoli, whole head, cut into florets
1/ Boil sweet potatoes until soft. Season the salmon, then place on a baking sheet in a 200°C oven for 12 mins.
2/ Break salmon into pieces in a bowl. Add sweet potato, red onion, chilli, walnuts and chives. Add seasoning, then mix.
3/ Divide mixture into four balls then pat down into flat circles. Heat some oil in a pan over a low heat and cook
4/ Steam kale and broccoli for six mins then plate up with fishcakes.
