Fiery Salmon and Chive Fish­cakes

• Sweet potato, 150g, peeled and cubed • Salmon fil­lets, 2 • Red onion, ½, finely chopped

• A red chilli, finely chopped

• Ground wal­nuts, 40g • Chives, hand­ful, finely chopped • Olive oil, 1tbsp • Kale, 200g • Broc­coli, whole head, cut into flo­rets


1/ Boil sweet pota­toes un­til soft. Sea­son the salmon, then place on a bak­ing sheet in a 200°C oven for 12 mins.

2/ Break salmon into pieces in a bowl. Add sweet potato, red onion, chilli, wal­nuts and chives. Add sea­son­ing, then mix.

3/ Di­vide mix­ture into four balls then pat down into flat cir­cles. Heat some oil in a pan over a low heat and cook

4/ Steam kale and broc­coli for six mins then plate up with fish­cakes.
