As ve­gan­ism goes from cult to com­mon place, many are de­cry­ing the dis­ap­pear­ance of the egg from break­fast ta­bles. Try this al­ter­na­tive: com­bine 65g of chick­pea flour, a pinch of gar­lic pow­der, a ta­ble­spoon of nu­tri­tional yeast and a pinch of bi­car­bon­ate of soda. Whisk in 100ml wa­ter, then com­bine with sautéed veg and spices and fry in batches, for 15g of pro­tein per “omelette”. Serve along­side rash­ers of tem­peh.
