High-risk foods (such as dairy prod­ucts, seafood, meat-based dishes and cooked

rice and pasta) that may con­tain food-poi­son­ing bac­te­ria are dan­ger­ous to

eat af­ter they’ve spent too long in the ‘tem­per­a­ture dan­ger zone’: be­tween 5°C and 60°C. Throw away high-risk foods that have been at room tem­per­a­ture for more than four hours, and don’t re­frig­er­ate it then re­use if it’s been in the ‘dan­ger zone’ for more than two hours.
