Quinoa & pump­kin mash

PREP + COOK 20 MIN­UTES • MAKES 1¾ CUPS (21 TA­BLE­SPOONS)

Place 1∕3 cup white quinoa in a fine sieve; rinse thor­oughly un­der cold run­ning wa­ter. Drain well. Com­bine quinoa and 2∕3 cup of wa­ter in a small saucepan; bring to the boil. Re­duce heat; sim­mer, cov­ered, for 12 min­utes or un­til liq­uid is ab­sorbed and quinoa is ten­der, cool. Boil, steam or mi­crowave 200g pump­kin un­til ten­der; cool. Com­bine quinoa, pump­kin and 1 ta­ble­spoon of cooled boiled wa­ter in a medium bowl; mash to the de­sired con­sis­tency. Give your child as much mash as de­sired.
