Quinoa & pumpkin mash
PREP + COOK 20 MINUTES • MAKES 1¾ CUPS (21 TABLESPOONS)
Place 1∕3 cup white quinoa in a fine sieve; rinse thoroughly under cold running water. Drain well. Combine quinoa and 2∕3 cup of water in a small saucepan; bring to the boil. Reduce heat; simmer, covered, for 12 minutes or until liquid is absorbed and quinoa is tender, cool. Boil, steam or microwave 200g pumpkin until tender; cool. Combine quinoa, pumpkin and 1 tablespoon of cooled boiled water in a medium bowl; mash to the desired consistency. Give your child as much mash as desired.
