You can use ku­mara (or­ange sweet potato) in­stead of the pump­kin, if you like. Store mash, cov­ered, in the fridge for up to a day. Mash is suit­able to freeze, in 1-ta­ble­spoon por­tions in ice-cube trays, cov­ered, for up to a month. If you are boil­ing or steam­ing the pump­kin, re­serve 1 ta­ble­spoon of the cook­ing wa­ter to use when mash­ing for added flavour and nu­tri­ents.
