Ku­mara squeaks

IN­GRE­DI­ENTS

350g ku­mara (or­ange sweet

potato), chopped coarsely

1½ tbsp olive oil 8 baby brus­sels sprouts

(120g), shred­ded finely

1 medium car­rot (120g),

grated coarsely

1 green onion (scal­lion),

sliced thinly

1 egg white pinch ground nut­meg

1 tbsp whole­meal spelt flour 250g cherry toma­toes,

quar­tered 20g baby spinach leaves

1 Steam or mi­crowave ku­mara un­til ten­der. Trans­fer to a medium bowl; mash un­til smooth. Set aside to cool.

2 Mean­while, heat 2 tea­spoons of the oil in a medium fry­ing pan over medium heat; cook sprouts, car­rot and onion, stir­ring, for 5 min­utes or un­til ten­der. Trans­fer to bowl with ku­mara. Add egg white and nut­meg; stir to com­bine.

3 Shape mix­ture into 8 pat­ties. Place flour on a plate. Dust pat­ties in flour, shak­ing off ex­cess.

4 Heat re­main­ing oil in same fry­ing pan over medium heat; cook pat­ties for 2 min­utes each side or un­til heated through. Serve with tomato and spinach.
