PREP + COOK 20 MINUTES • MAKES 8
350g kumara (orange sweet
potato), chopped coarsely
1½ tbsp olive oil 8 baby brussels sprouts
(120g), shredded finely
1 medium carrot (120g),
1 green onion (scallion),
1 egg white pinch ground nutmeg
1 tbsp wholemeal spelt flour 250g cherry tomatoes,
quartered 20g baby spinach leaves
1 Steam or microwave kumara until tender. Transfer to a medium bowl; mash until smooth. Set aside to cool.
2 Meanwhile, heat 2 teaspoons of the oil in a medium frying pan over medium heat; cook sprouts, carrot and onion, stirring, for 5 minutes or until tender. Transfer to bowl with kumara. Add egg white and nutmeg; stir to combine.
3 Shape mixture into 8 patties. Place flour on a plate. Dust patties in flour, shaking off excess.
4 Heat remaining oil in same frying pan over medium heat; cook patties for 2 minutes each side or until heated through. Serve with tomato and spinach.
