While this may feel like you’re eat­ing dessert for break­fast, this mousse is a fan­tas­ti­cally healthy start to the day. Choc-av­o­cado mousse with berries and gra­nola* Makes 4) 60g fresh (med­jool) dates, seeded and roughly chopped 3 ba­nanas 1 av­o­cado, stone re­moved 35g raw ca­cao pow­der

TO SERVE: toasted gra­nola, fresh berries, ed­i­ble flow­ers Put the dates in a small heat­proof bowl and cover with warm water. Leave to soak for 10 min­utes. Drain, dis­card­ing the water, and trans­fer the dates to a food pro­ces­sor with the ba­nana, av­o­cado and ca­cao pow­der. Whizz un­til smooth. Serve the mousse into bowls and top with the gra­nola, berries and flow­ers.
