Cu­cum­ber sail­ing boats

IN­GRE­DI­ENTS

2 small Le­banese (short) cu­cum­bers 1 cup (260g) plain full-fat yo­ghurt 6 drops liq­uid ste­via or 2 tsp your

sweet­ener of choice pinch of Celtic sea salt 1 tbsp chopped dill 1 red cap­sicum (pep­per), de­seeded

1 Cut the cu­cum­bers in half length­ways and scoop out the seeds.

2 Com­bine the yo­ghurt, ste­via, salt and dill in a bowl. Spoon into the hol­lowed­out cu­cum­bers.

3 Cut tri­an­gles for sails out of the cap­sicum. Skewer each sail with a tooth­pick and stick the other end in the cu­cum­ber.

This is a great snack to let the kids make – with parental su­per­vi­sion.

HEALTH TIP

Cu­cum­bers are mostly water, so they’re a great way to keep hy­drated. They’re also a good source of B vi­ta­mins, so they’ll give your child a lit­tle en­ergy boost.
