MINCE AND POTATO HOT POT
5 medium potatoes, peeled 1 tbsp oil 500g beef mince 1 onion, finely chopped 1 tbsp tomato sauce 1 tbsp Worcestershire sauce 1 tsp salt and pepper 60g margarine 1/4 cup plain flour 2 cups milk 1 cup cheese, grated 250g canned mushrooms 30g margarine
Preheat oven to 190C. Peel potatoes, cut into thin slices and place in a bowl with water. Heat oil in frying pan, add mince, onion, sauces, salt and pepper. Brown mince and set aside. Melt margarine in a saucepan and add flour. Blend until smooth. Gradually add milk and stir continuously until a thick sauce is made. Reduce heat and stir in cheese. Remove from heat. Line a casserole dish with half the potato slices, pour in the mince mixture and top with mushrooms. Pour cheese sauce over mixture and top with remaining potatoes. Dot casserole with extra margarine and place in oven for 30-40 minutes until browned and potatoes are tender.
