MINCE AND POTATO HOT POT

5 medium pota­toes, peeled 1 tbsp oil 500g beef mince 1 onion, finely chopped 1 tbsp tomato sauce 1 tbsp Worcestershire sauce 1 tsp salt and pep­per 60g mar­garine 1/4 cup plain flour 2 cups milk 1 cup cheese, grated 250g canned mush­rooms 30g mar­garine

Method

Pre­heat oven to 190C. Peel pota­toes, cut into thin slices and place in a bowl with wa­ter. Heat oil in fry­ing pan, add mince, onion, sauces, salt and pep­per. Brown mince and set aside. Melt mar­garine in a saucepan and add flour. Blend un­til smooth. Grad­u­ally add milk and stir con­tin­u­ously un­til a thick sauce is made. Re­duce heat and stir in cheese. Re­move from heat. Line a casse­role dish with half the potato slices, pour in the mince mix­ture and top with mush­rooms. Pour cheese sauce over mix­ture and top with re­main­ing pota­toes. Dot casse­role with ex­tra mar­garine and place in oven for 30-40 min­utes un­til browned and pota­toes are ten­der.
