125g plain flour

1 tbsp sugar

1 egg yolk

1 pinch salt

1 le­mon, juiced

75g but­ter


8 large ki­wifruit, peeled, cooked

2 x 85g le­mon jelly

300ml whipped cream


In a large bowl rub but­ter into the dry in­gre­di­ents. Us­ing an elec­tric beater, beat sugar, le­mon juice and yolk with a lit­tle wa­ter. Add to the dry in­gre­di­ents and mix un­til a firm dough is formed. Grease a flan dish with cook­ing spray. Roll out pas­try to fit flan dish on a lightly floured sur­face. Bake pas­try base at 180C for ap­prox­i­mately 25 min­utes, un­til golden brown. Al­low to cool. Top­ping: Slice cooked ki­wifruit, ar­range over pas­try base. Make le­mon jelly ac­cord­ing to packet di­rec­tions. Al­low to cool but not com­pletely set. Pour over ki­wifruit in pas­try base. Place in re­frig­er­a­tor to set. Serve with whipped cream.
