“Cupcakes are eas­ier to eat and bake than most other baked goods and have to start with sim­plic­ity and taste,’’ he says.

“We avoid over­pow­er­ing with sweet­ness and tastes you typ­i­cally ex­pect in cupcakes, for ex­am­ple, cream cheese.

“Set your in­tent and ex­per­i­ment. There are only a few in­gre­di­ents in a cup­cake so use good ones.”
