Mango, av­o­cado, pear salad

Preparation: 12 min­utes Cook­ing: Nil Serves: 4 In­gre­di­ents 2 av­o­ca­dos, sliced 1 mango, large, chopped into pieces 1 pear, sliced se­lec­tion of salad greens, 1 cup bean sprouts

cup mush­rooms, thinly sliced prawns, smoked sal­mon or cold cooked turkey, or ham

cup pe­can or ma­cadamia nuts, toasted Dress­ing: 6 tbsp oil 3 tsp red wine vine­gar or rasp­berry vine­gar 2 tsp whole­grain mus­tard 2 tsp honey salt and pep­per 1 tsp mint chopped Method

Place the salad leaves and bean sprouts onto a plat­ter. Mix salad dress­ing in­gre­di­ents to­gether. Ar­range man­gos, av­o­cado, mush­rooms, pear and seafood, turkey or ham and pour over the dress­ing. Sprin­kle with the roasted nuts.
