Mango, avocado, pear salad
Preparation: 12 minutes Cooking: Nil Serves: 4 Ingredients 2 avocados, sliced 1 mango, large, chopped into pieces 1 pear, sliced selection of salad greens, 1 cup bean sprouts
cup mushrooms, thinly sliced prawns, smoked salmon or cold cooked turkey, or ham
cup pecan or macadamia nuts, toasted Dressing: 6 tbsp oil 3 tsp red wine vinegar or raspberry vinegar 2 tsp wholegrain mustard 2 tsp honey salt and pepper 1 tsp mint chopped Method
Place the salad leaves and bean sprouts onto a platter. Mix salad dressing ingredients together. Arrange mangos, avocado, mushrooms, pear and seafood, turkey or ham and pour over the dressing. Sprinkle with the roasted nuts.
