Broad bean, zucchini salad
Preparation: 10 minutes Cooking: 2 minutes Serves: 4 Ingredients 250g broad beans, blanched and skins removed 1 medium zucchini, thinly sliced 200g snow peas, topped and tailed 1 red capsicum, seeded and sliced 1 salad or red onion, thinly sliced
cup black olives, 200g fetta cheese, crumbled 1/4 cup olive oil 2 tbsp lemon juice 1 clove crushed garlic Method
Combine salad ingredients in a bowl. Mix dressing ingredients in a separate bowl and pour over salad. Mix thoroughly and serve.
