Prepa­ra­tion: 10 min­utes Cook­ing: 2 min­utes Serves: 4 In­gre­di­ents 250g broad beans, blanched and skins re­moved 1 medium zuc­chini, thinly sliced 200g snow peas, topped and tailed 1 red cap­sicum, seeded and sliced 1 salad or red onion, thinly sliced

cup black olives, 200g fetta cheese, crum­bled 1/4 cup olive oil 2 tbsp le­mon juice 1 clove crushed gar­lic Method

Com­bine salad in­gre­di­ents in a bowl. Mix dress­ing in­gre­di­ents in a sep­a­rate bowl and pour over salad. Mix thor­oughly and serve.
