A ver­sa­tile veg­etable that when chopped and com­bined with car­rot, cel­ery and onion makes a great base for soups or stews. Its sweet flavour also goes well with but­ter and cream in sauces and gratins. SIL­VER­BEET: Has an earthy flavour. Wash in cold salted wa­ter and drain, then shred and add raw to sal­ads. Or use in stir-fries, cur­ries, quiches, soups or as a side dish. Cook as briefly as pos­si­ble to re­tain max­i­mum nu­tri­ents. Price: $4.90/bun­dle.
