Prepa­ra­tion: 15 min­utes Cook­ing: 0 min­utes Serves: 4 In­gre­di­ents 1 av­o­cado, peeled and sliced 1 large beet­root, peeled and grated 1 car­rot, peeled and grated 1 small cos let­tuce, torn into small pieces ½ red onion, sliced 1 or­ange, peeled and cut into seg­ments

1⁄ cup wal­nuts, chopped and

4 toasted

Dress­ing 1⁄ cup Ital­ian dress­ing

4 2 tbsp le­mon juice

1 tsp whole­grain mus­tard

Method Place all salad in­gre­di­ents to­gether in a bowl. Toss gen­tly to com­bine. Place dress­ing in­gre­di­ents into a jar. Se­cure lid. Shake well. Driz­zle over salad be­fore serv­ing.
