Spicy citrus chutney
Preparation: 30 minutes Cooking: 1½ hours Makes: 6 cups Ingredients 4 oranges 4 lemons 1 red capsicum, finely chopped 1 green capsicum, finely chopped 4 onions, chopped 1 cup sultanas 3 cups brown sugar 1 tbsp freshly grated ginger 2 tsp ground coriander 1 tsp ground cumin 1 tbsp chilli powder 1 tsp salt
Method Quarter oranges and lemons. Cut into thin slices. Place in a large saucepan with water. Bring to boil. Simmer, covered for about 40 minutes or until rinds are soft. Add capsicum. Simmer, covered, for a further 5 minutes. Add remaining ingredients to pan. Stir over heat, without boiling, until sugar is dissolved. Bring to boil. Simmer, uncovered for about 30 minutes or until mixture is thick. Stir occasionally. Spoon into hot, clean, sterilised jars. Cool slightly. Seal. This is a delicious tangy yet spicy Indian-style preserve to serve with meats and savoury dishes. It adds a special something to cheese and salad sandwiches.
