Spicy cit­rus chut­ney

Prepa­ra­tion: 30 min­utes Cook­ing: 1½ hours Makes: 6 cups In­gre­di­ents 4 or­anges 4 le­mons 1 red cap­sicum, finely chopped 1 green cap­sicum, finely chopped 4 onions, chopped 1 cup sul­tanas 3 cups brown sugar 1 tbsp freshly grated ginger 2 tsp ground co­rian­der 1 tsp ground cumin 1 tbsp chilli pow­der 1 tsp salt

Method Quar­ter or­anges and le­mons. Cut into thin slices. Place in a large saucepan with wa­ter. Bring to boil. Sim­mer, cov­ered for about 40 min­utes or un­til rinds are soft. Add cap­sicum. Sim­mer, cov­ered, for a fur­ther 5 min­utes. Add re­main­ing in­gre­di­ents to pan. Stir over heat, with­out boiling, un­til sugar is dis­solved. Bring to boil. Sim­mer, un­cov­ered for about 30 min­utes or un­til mix­ture is thick. Stir oc­ca­sion­ally. Spoon into hot, clean, ster­ilised jars. Cool slightly. Seal. This is a de­li­cious tangy yet spicy In­dian-style pre­serve to serve with meats and savoury dishes. It adds a spe­cial some­thing to cheese and salad sand­wiches.
