Av­o­cado, rocket bruschetta

Prepa­ra­tion: 5 Cook­ing: - Serves: 2 In­gre­di­ents 4 slices sour dough bread 1 ripe av­o­cado 1 ripe Pack­ham pear, quar­tered, cored and sliced

1⁄ cup baby rocket leaves

2 50g shaved parme­san le­mon wedges to serve

Method Lightly toast the sour dough bread if de­sired. Roughly mash 1⁄ of the

4 av­o­cado onto each slice and sea­son with a pinch of salt. Top with slices of pear, rocket leaves and shaved parme­san. Grind over black pep­per and serve with le­mon.
