Avocado, rocket bruschetta
Preparation: 5 Cooking: - Serves: 2 Ingredients 4 slices sour dough bread 1 ripe avocado 1 ripe Packham pear, quartered, cored and sliced
1⁄ cup baby rocket leaves
2 50g shaved parmesan lemon wedges to serve
Method Lightly toast the sour dough bread if desired. Roughly mash 1⁄ of the
4 avocado onto each slice and season with a pinch of salt. Top with slices of pear, rocket leaves and shaved parmesan. Grind over black pepper and serve with lemon.
