Chicken orange and snow pea salad
Preparation: 10 minutes Cooking: - Serves: 4 Ingredients 1 cooked chicken, meat removed, sliced 12 snow peas, washed and trimmed
1⁄ cucumber, peeled and
2 sliced 2 navel oranges, peeled and thickly sliced 150g baby spinach leaves, washed and dried
Dressing 4 tbsp balsamic vinegar 4 tbsp olive oil 1 tbsp wholegrain mustard
Method Combine dressing ingredients in a jar with lid. Shake well. Combine all salad ingredients in a large bowl. Drizzle with dressing. Serve with fresh crusty bread.
