Chicken or­ange and snow pea salad

Prepa­ra­tion: 10 min­utes Cook­ing: - Serves: 4 In­gre­di­ents 1 cooked chicken, meat re­moved, sliced 12 snow peas, washed and trimmed

1⁄ cu­cum­ber, peeled and

2 sliced 2 navel or­anges, peeled and thickly sliced 150g baby spinach leaves, washed and dried

Dress­ing 4 tbsp bal­samic vine­gar 4 tbsp olive oil 1 tbsp whole­grain mus­tard

Method Com­bine dress­ing in­gre­di­ents in a jar with lid. Shake well. Com­bine all salad in­gre­di­ents in a large bowl. Driz­zle with dress­ing. Serve with fresh crusty bread.
