Prepa­ra­tion: 10 min­utes Cook­ing: 20 min­utes Serves: 4 In­gre­di­ents 500g fresh rhubarb stalks, cut into 2cm pieces 1⁄ cup sugar

2 1⁄ cup or­ange juice

2 1⁄ cup or­ange liqueur (op­tional)

4 Yo­ghurt or ice-cream to serve

Method Bring rhubarb, sugar and or­ange juice to a sim­mer in a medium saucepan over low heat. Stir un­til sugar dis­solves. Cover pan. Al­low to sim­mer slowly for 10 min­utes (rhubarb should be very soft). Fold through or­ange li­quer. Serve with vanilla yo­ghurt or ice-cream­can be served warm or cold.
