Rhubarb poached in orange
Preparation: 10 minutes Cooking: 20 minutes Serves: 4 Ingredients 500g fresh rhubarb stalks, cut into 2cm pieces 1⁄ cup sugar
2 1⁄ cup orange juice
2 1⁄ cup orange liqueur (optional)
4 Yoghurt or ice-cream to serve
Method Bring rhubarb, sugar and orange juice to a simmer in a medium saucepan over low heat. Stir until sugar dissolves. Cover pan. Allow to simmer slowly for 10 minutes (rhubarb should be very soft). Fold through orange liquer. Serve with vanilla yoghurt or ice-creamcan be served warm or cold.
