With WA navels now at the peak of their sea­son and tast­ing amaz­ing, it’s the per­fect time to en­joy the sim­ple fresh flavour of this easy dessert. Be sure you look for the bright blue WA cit­rus sticker as a guar­an­tee you’re buy­ing lo­cal cit­rus fruit.

Prepa­ra­tion: 20 min­utes Cook­ing: 15 min­utes Serves: 4 In­gre­di­ents Rind of 2 navel or­anges 1 cup boiling wa­ter 1 cup sugar 4 navel or­anges 250g ri­cotta cheese

Method Slice or­ange rind into match­stick sized pieces. Put the rind and boiling wa­ter into a 1 litre casse­role dish and mi­crowave and high for 8 min­utes. Add the sugar and stir to dis­solve. Mi­crowave for 7 min­utes. Peel or­anges. Re­move pith and out­side mem­brane us­ing a very sharp knife. Take care to keep or­anges whole. Put or­anges into a dish that just holds them and cover with syrup and rind. Re­frig­er­ate for sev­eral hours or overnight. Serve each or­ange on a bed of ri­cotta topped with glazed rind and syrup.
