Whiting with chilled mushroom and parsley dressing
Preparation: 5 minutes Cooking: 12 minutes Serves: 4 Ingredients
1 cup sour light cream 1 clove garlic, crushed 1 tbsp lemon juice 1 tsp finely grated lemon rind 2 cups finely sliced mushrooms 1 ⁄3 cup freshly chopped parsley 400g whiting fillets Plain flour 1 egg, lightly beaten 1 cup fresh white breadcrumbs 2 tbsp olive oil Salad and vegetables, to serve
Place sour light cream in a saucepan. Add crushed garlic. Simmer very gently for about 2 minutes, stirring. Do not boil. Add lemon juice, lemon rind, mushrooms and parsley. Continue simmering for about 5 minutes or until thickened slightly. Chill before serving. Coat whiting fillets in flour. Dip into beaten egg. Coat lightly with breadcrumbs. Heat oil in frying pan. Quickly cook fish (2 minutes each side) until golden. Serve with chilled dressing. Accompany with a salad, sauteed pumpkin and potato slices.
