Chilli and tomato sauce per­fect for a pasta dish

1 tbsp oil 2 onions, chopped 2 cloves gar­lic, crushed 500g lean beef mince 6 ripe toma­toes 3 tbsp tomato paste 1 red chilli, finely chopped 2 cups sliced mush­rooms 2 cups red kid­ney beans 2 tbsp chopped fresh pars­ley Method

Saute onion and gar­lic in oil un­til onion is soft. Add mince, stir­ring oc­ca­sion­ally un­til mince has browned. Add toma­toes, tomato paste, mush­rooms and chilli. Bring to the boil. Re­duce heat and sim­mer un­cov­ered un­til sauce is thick. This will take about 20 min­utes. Add beans and pars­ley. Heat through. Serve over hot cooked pasta.
