Lamb Chops with Nec­tarine Salsa

8 lamb chops Oven-baked potato wedges, to serve Nec­tarine Salsa:

3 ripe nec­tarines, stoned and diced

1 or­ange, flesh and juice 1 tsp grated fresh ginger

3 spring onions, sliced

Freshly ground black pep­per

Method

Grill lamb chops for 4 min­utes each side or un­til cooked. To make salsa, com­bine nec­tarines, or­ange flesh, juice and ginger in a serv­ing bowl. Mix well. Stir in spring onion and freshly ground black pep­per. Serve im­me­di­ately or re­frig­er­ate be­fore use. Serve with salsa over lamb, ac­com­pa­nied with oven-baked potato wedges.
