Per­sim­mon, av­o­cado salad

Cook­ing: nil Serves: 4-6 In­gre­di­ents: Juice of 1 lemon 1 tsp honey 1 tsp grated ginger White pep­per to taste 1⁄2 gourmet let­tuce, sep­a­rated, rinsed 3 sweet per­sim­mons, cut into thin wedges 1 grape­fruit, peeled, cubed 2 av­o­ca­dos, peeled, de­seeded, diced

Method:

Com­bine lemon juice, honey, ginger and pep­per in a screw-top jar. Shake well. Set aside. In a large bowl, com­bine per­sim­mon, grape­fruit and av­o­cado to dress­ing. Mix gen­tly to com­bine. Line a bowl, plate or plat­ter with let­tuce leaves. Ar­range per­sim­mon mix­ture onto let­tuce leaves. Serve with pan-fried fish.
