Persimmon, avocado salad

Cooking: nil Serves: 4-6 Ingredients: Juice of 1 lemon 1 tsp honey 1 tsp grated ginger White pepper to taste 1⁄2 gourmet lettuce, separated, rinsed 3 sweet persimmons, cut into thin wedges 1 grapefruit, peeled, cubed 2 avocados, peeled, deseeded, diced
Combine lemon juice, honey, ginger and pepper in a screw-top jar. Shake well. Set aside. In a large bowl, combine persimmon, grapefruit and avocado to dressing. Mix gently to combine. Line a bowl, plate or platter with lettuce leaves. Arrange persimmon mixture onto lettuce leaves. Serve with pan-fried fish.
