Stone fruit and rice noo­dle salad with ginger and lime juice

Prepa­ra­tion: 15 min­utes Cook­ing: 10 min­utes Serves: 4 In­gre­di­ents 200g rice noo­dles Juice of 1 lime or lemon 2 tbsp oys­ter sauce 1 tbsp soy sauce 1 tsp grated fresh ginger 2 peaches, peeled and sliced 2 nec­tarines, sliced 2 Le­banese cu­cum­bers, sliced di­ag­o­nally 4 spring onions, sliced di­ag­o­nally

1⁄ cup peanuts, toasted

3 Co­rian­der to gar­nish

Method Place noo­dles in boil­ing wa­ter. Cover. When soft, drain and cut. Com­bine the lime juice, oys­ter sauce and soy sauce in a jar with lid. Shake well. Place all in­gre­di­ents ex­cept co­rian­der in a bowl. Toss dress­ing through. Serve salad in in­di­vid­ual salad bowls gar­nished with co­rian­der. Serve with bar­be­cued meats.
