Stone fruit and rice noodle salad with ginger and lime juice
Preparation: 15 minutes Cooking: 10 minutes Serves: 4 Ingredients 200g rice noodles Juice of 1 lime or lemon 2 tbsp oyster sauce 1 tbsp soy sauce 1 tsp grated fresh ginger 2 peaches, peeled and sliced 2 nectarines, sliced 2 Lebanese cucumbers, sliced diagonally 4 spring onions, sliced diagonally
1⁄ cup peanuts, toasted
3 Coriander to garnish
Method Place noodles in boiling water. Cover. When soft, drain and cut. Combine the lime juice, oyster sauce and soy sauce in a jar with lid. Shake well. Place all ingredients except coriander in a bowl. Toss dressing through. Serve salad in individual salad bowls garnished with coriander. Serve with barbecued meats.
