Warm chicken plum salad
Preparation: 12 minutes Cooking: 6 minutes Serves: 4 Ingredients 1 tbsp oil 2 cloves garlic, crushed Meat from cooked chicken, chopped
1⁄ cup coarsely chopped peanuts
4 2 cups snow peas, trimmed 2 spring onions, chopped 1 tsp brown sugar 1 tsp soy sauce 5 plums, stone removed and sliced Lettuce leaves, washed Chopped coriander for garnish
Method Heat oil in saucepan. Add garlic. Saute until soft. Add chicken, peanuts, snow peas, spring onions, brown sugar and soy sauce. Stir to heat through. Add plum slices. Toss gently. Serve immediately on a bed of lettuce leaves. Sprinkle with chopped coriander.
