Warm chicken plum salad

Prepa­ra­tion: 12 min­utes Cook­ing: 6 min­utes Serves: 4 In­gre­di­ents 1 tbsp oil 2 cloves gar­lic, crushed Meat from cooked chicken, chopped

1⁄ cup coarsely chopped peanuts

4 2 cups snow peas, trimmed 2 spring onions, chopped 1 tsp brown sugar 1 tsp soy sauce 5 plums, stone re­moved and sliced Let­tuce leaves, washed Chopped co­rian­der for gar­nish

Method Heat oil in saucepan. Add gar­lic. Saute un­til soft. Add chicken, peanuts, snow peas, spring onions, brown sugar and soy sauce. Stir to heat through. Add plum slices. Toss gen­tly. Serve im­me­di­ately on a bed of let­tuce leaves. Sprin­kle with chopped co­rian­der.
