Peaches and cream
Divine and dazzling are only two ways to describe this satisfying finale to any meal.
Preparation: 10 minutes Cooking: 5 minutes Serves: 8 Ingredients 1kg sliced peeled peaches 2 tbsp kirsch or peach liqueur 200ml reduced-fat sour cream ½ tsp ground cinnamon ¼ tsp ground nutmeg ½ cup light brown sugar
Method Toss peaches in liqueur in shallow ovenproof 28 x 14cm glass baking dish. Spread into even layer. Combine sour cream, cinnamon and nutmeg in small bowl. Mix well. Spoon mixture evenly over peaches. This may be covered and refrigerated up to 2 hours before cooking. Preheat grill. Sprinkle brown sugar evenly over sour cream mixture to cover. Grill 10cm from heat for 3 to 5 minutes or until brown sugar has melted and is bubbly. Watch closely after 3 minutes so that sugar does not burn. Serve over slices of sponge, butter cake or crepes.
