Avocado salad with fetta
Preparation: 16 minutes Cooking: 5 minutes Serves: 4 Ingredients 1 red capsicum 1 avocado, sliced
1⁄2 cup chopped sundried tomatoes 1 gourmet lettuce, torn into bite sized pieces 4 spring onions, sliced diagonally 1 punnet cherry tomatoes, halved
Dressing 200g fetta cheese cup grated Parmesan cheese 1⁄2 cup olive oil 1⁄4
Cut capsicum in half. Remove seeds and membrane. Place under grill until skin turns black and bubbles. Immerse capsicum into cold water immediately. Peel skin away from flesh. Slice flesh. Combine all of the salad ingredients. Mix gently. In a food processor, mix dressing ingredients until smooth. Divide salad evenly among 4 bowls. Top with a dollop of the dressing and serve with fresh crusty bread.
