Prepa­ra­tion: 16 min­utes Cook­ing: 5 min­utes Serves: 4 In­gre­di­ents 1 red cap­sicum 1 av­o­cado, sliced

1⁄2 cup chopped sun­dried toma­toes 1 gourmet let­tuce, torn into bite sized pieces 4 spring onions, sliced di­ag­o­nally 1 pun­net cherry toma­toes, halved

Dress­ing 200g fetta cheese cup grated Parme­san cheese 1⁄2 cup olive oil 1⁄4

Method

Cut cap­sicum in half. Re­move seeds and mem­brane. Place un­der grill un­til skin turns black and bub­bles. Im­merse cap­sicum into cold wa­ter im­me­di­ately. Peel skin away from flesh. Slice flesh. Com­bine all of the salad in­gre­di­ents. Mix gen­tly. In a food pro­ces­sor, mix dress­ing in­gre­di­ents un­til smooth. Di­vide salad evenly among 4 bowls. Top with a dol­lop of the dress­ing and serve with fresh crusty bread.
