Peach chut­ney

Prepa­ra­tion: 20 min­utes Cook­ing: 2 hours Serves: 6 jars In­gre­di­ents 2kg peaches, sliced from stone and roughly chopped 1 small green cap­sicum 1kg sugar 1 cup chopped dates ½ cup chopped ginger 2 tsp salt 1 heaped tsp cin­na­mon ½ tsp ground cloves Grated rind of 1 lemon

Method Place all in­gre­di­ents in a large saucepan and bring to boil. Re­duce heat and sim­mer un­cov­ered 1½ to 2 hours or un­til thick. Stir fre­quently; check con­sis­tency (like jam) by cool­ing half a tea­spoon on a chilled saucer. Poor into ster­ilised jars while still hot.
