Preparation: 20 minutes Cooking: 2 hours Serves: 6 jars Ingredients 2kg peaches, sliced from stone and roughly chopped 1 small green capsicum 1kg sugar 1 cup chopped dates ½ cup chopped ginger 2 tsp salt 1 heaped tsp cinnamon ½ tsp ground cloves Grated rind of 1 lemon
Method Place all ingredients in a large saucepan and bring to boil. Reduce heat and simmer uncovered 1½ to 2 hours or until thick. Stir frequently; check consistency (like jam) by cooling half a teaspoon on a chilled saucer. Poor into sterilised jars while still hot.
