Thai chicken skew­ers

Prepa­ra­tion: 10 min­utes Cook­ing: 15 min­utes Makes: 16 In­gre­di­ents 8 (500g) chicken ten­der­loins 16 wooden skew­ers, soaked 30 min­utes

Mari­nade/dress­ing 1⁄4 cup light soy sauce 1⁄4 cup lime juice 2 tbsp fish sauce 1 tbsp sugar 1 stalk lemon grass, white part only, thinly sliced 1 tbsp chopped fresh co­rian­der 1 red chilli, finely sliced


Com­bine all mari­nade/dress­ing in­gre­di­ents in a jar with a tight-fit­ting lid. Shake well. Slice ten­der­loins in half length­wise. Thread on to skew­ers. Brush some of the mari­nade over the chicken. Grill or bar­be­cue one side of the chicken un­til browned. Brush un­cooked side with re­main­ing dress­ing. Turn. Grill un­til cooked. May be re­heated in the oven.
