Thai chicken skewers
Preparation: 10 minutes Cooking: 15 minutes Makes: 16 Ingredients 8 (500g) chicken tenderloins 16 wooden skewers, soaked 30 minutes
Marinade/dressing 1⁄4 cup light soy sauce 1⁄4 cup lime juice 2 tbsp fish sauce 1 tbsp sugar 1 stalk lemon grass, white part only, thinly sliced 1 tbsp chopped fresh coriander 1 red chilli, finely sliced
Combine all marinade/dressing ingredients in a jar with a tight-fitting lid. Shake well. Slice tenderloins in half lengthwise. Thread on to skewers. Brush some of the marinade over the chicken. Grill or barbecue one side of the chicken until browned. Brush uncooked side with remaining dressing. Turn. Grill until cooked. May be reheated in the oven.
