Noodles with spicy chicken
Preparation: 10 mins Cooking: 5 mins Serves: 4 Ingredients
2 tbsp canola oil 2 red chillies, sliced finely 2 cloves garlic, crushed 1 tsp freshly grated ginger 1 tsp ground coriander 500g fresh Asian-style egg noodles, pre-cooked 1 tbsp soy sauce 250g cooked chicken strips 1 large nectarine, peeled, diced ½ cup chopped spring onion
Heat oil in a large frying pan or wok. Add chillies, ginger and coriander. Cook, stirring frequently, for about 1 minute. Add noodles. Toss through spice mixture for about 2 minutes. Add soy sauce, chicken strips, nectarine and spring onion. Cook for a further minute. Serve immediately.
