Noo­dles with spicy chicken

Prepa­ra­tion: 10 mins Cook­ing: 5 mins Serves: 4 In­gre­di­ents

2 tbsp canola oil 2 red chill­ies, sliced finely 2 cloves gar­lic, crushed 1 tsp freshly grated ginger 1 tsp ground co­rian­der 500g fresh Asian-style egg noo­dles, pre-cooked 1 tbsp soy sauce 250g cooked chicken strips 1 large nec­tarine, peeled, diced ½ cup chopped spring onion


Heat oil in a large fry­ing pan or wok. Add chill­ies, ginger and co­rian­der. Cook, stir­ring fre­quently, for about 1 minute. Add noo­dles. Toss through spice mix­ture for about 2 min­utes. Add soy sauce, chicken strips, nec­tarine and spring onion. Cook for a fur­ther minute. Serve im­me­di­ately.
