Chilli po­tato fish cakes

Prepa­ra­tion: 20 min­utes Cook­ing: 30 min­utes Serves: 4


2 large Kestrel pota­toes cooked and dry mashed

220g can tuna or salmon, drained

2 tbsp chopped fresh co­rian­der

1 tbsp lime juice Pinch chilli pow­der

1 egg, beaten

Plain flour

Oil for fry­ing Sweet chilli sauce

Mixed let­tuce leaves

Bean or snow pea shoots


Com­bine mashed po­tato, fish, co­rian­der, lime juice and chilli pow­der in a bowl. Add beaten egg. Shape into eight pat­ties. Coat with flour and fry, turn­ing only once. Serve pat­ties on a bed of mixed let­tuce. Top with bean shoots and driz­zle sweet chilli sauce over.
