Warm­ing win­ter zuc­chini and potato soup

Prepa­ra­tion: 15 min­utes Cook­ing: 35 min­utes Serves: 4


1 tsp oil

1 leek, sliced

1 large zuc­chini, sliced

1 medium potato, peeled and chopped

1 tsp chopped fresh rose­mary

2 cups chicken stock Freshly ground black pep­per

1 cup milk


Heat a large saucepan and brush the base with oil. Add leek. Cook for a few min­utes un­til soft. Add zuc­chini, potato, rose­mary, chicken stock and pep­per. Cover and cook un­til veg­eta­bles are ten­der. Blend in food pro­ces­sor un­til the soup is smooth. Add milk. Re­heat the soup gen­tly and serve im­me­di­ately.
