Baked chicken with pear and macadamia nuts

Prepa­ra­tion: 10 min­utes Cook­ing 20 min­utes Serves 4

In­gre­di­ents

600g skin­less chicken breast, sliced

2 cups chicken stock

1 onion, sliced finely

2 large firm pears, peeled, cored, sliced

1 tbsp olive oil

1⁄2 cup macadamia nuts

1 tsp ground car­da­mon

1 tbsp brown su­gar

1 tbsp honey

3 cups shred­ded cab­bage

Method

Place chicken, stock, onion, pears and olive oil in a shal­low bak­ing dish. Cover. Bake at 180C for 45 min­utes. Mean­while, com­bine macadamias, car­da­mon, brown su­gar and honey. Spread out on a bak­ing tray and add to the oven for 10 min­utes. Set aside to cool for 10 min­utes. Lightly steam cab­bage in the mi­crowave for 2 min­utes. Di­vide be­tween four serv­ing plates. Spoon baked chicken and pears over steamed cab­bage. Spoon onion and pear sauce over the top. Fin­ish with macadamia mix­ture be­fore serv­ing with white rice and steamed greens.
