Delicious caramelised onions
Preparation: 5 minutes Cooking: 20 minutes Makes: 1 jar
4 brown onions, large, sliced
1 tbsp brown sugar
2 tbsp olive oil
2 tbsp balsamic or red or white wine vinegar Salt and pepper to taste
Slice onions, and cook gently in oil and sugar, slowly until caramelised. Add vinegar, then season. Place in a sterilised jar and store in the refrigerator. Add fresh thyme before serving as a side dish. Marries well with turkey, ham, bruschetta with blue cheese.
