De­li­cious caramelised onions

Prepa­ra­tion: 5 min­utes Cook­ing: 20 min­utes Makes: 1 jar


4 brown onions, large, sliced

1 tbsp brown su­gar

2 tbsp olive oil

2 tbsp bal­samic or red or white wine vine­gar Salt and pep­per to taste


Slice onions, and cook gen­tly in oil and su­gar, slowly un­til caramelised. Add vine­gar, then sea­son. Place in a ster­ilised jar and store in the re­frig­er­a­tor. Add fresh thyme be­fore serv­ing as a side dish. Mar­ries well with tur­key, ham, br­uschetta with blue cheese.
